Not very brunchy but this was too good not to share😇 ‘Spinatspatzeln’ is a very common dish from where I am from and reminds me so much of home. And the dough is made of only three ingredients. Here’s what you need:
For the dough
3eggs
250g spinach
300g flour
For the sauce
1/2 onion
250ml cream
100g ham
parmesan cheese

Cook the spinach, squeeze and strain it so it’s creamy. I always use a mixer for that. Combine with eggs and flour. You need approximately 300g of flour but sometimes you need to add a bit less or more so that the dough is thick but still a bit runny. Cook water until boiling and add salt. Grate the dough with a spatzel grater so that the spatzel drops directly into the boiling salt water. When they float to the surface, let them cook for 1 minute more and they are done. For the sauce, chop onions and add them with olive oil to pan. Let cook for a couple of minutes before adding ham and cream. Season with salt and pepper. Add spatzeln to sauce and serve. Add parmesan on top. Enjoy ✨
