Everyone loved these spinach salmon roll ups ๐Ÿคค Can you believe the dough is only made of two main ingredients?๐Ÿคฏ Hereโ€™s what you need:
For the dough
4 eggs
250g spinach leaves (either frozen or cooked)
salt, pepper and nutmeg to taste
For the filling
300g cream cheese with herbs
250g smoked salmon
1tbsp lemon juice
salt and pepper to taste

Preheat oven at 200C. Separate eggs and best egg whites with a pinch of salt until firm. Blend spinach together with egg yolks and seasoning and fold in egg whites. Spread on baking pan and bake for about 15-20 minutes. Out of the oven, place on fresh baking sheet and let cool. Mix cream cheese with lemon juice and seasoning and spread on dough. Lay smoked salmon on top. Cut dough in the middle, roll up sideways and cut into fingerfood. Enjoy โœจ
