Easy vegetable quiche 🧀🍅 This recipe starts with a pre-made dough so it’s very quick and perfect for breakfast or brunch 😋 It’s filled with lots of veggies too! Here’s what you need:
1 refrigerated pie crust
1 onion
2 carrots
1 zucchini
1/2 leek
2 eggs
1/2 cup greek yogurt
One handful grated cheese
cherry tomatoes on top
spices to taste

Start by unrolling pie crust and press it into pie plate. Using a fork, stab some holes into the crust and bake it for about 10 minutes at 180C. Wash and cut veggies and cook in some olive oil until slightly done. Add greek yogurt, spices and half of the cheese to it. Add everything to pie crust and top off with cherry tomatoes and the rest of the cheese. In a separate bowl, mix together the two eggs and pour it over the quiche. Make sure every part is covered. Place in oven for 30 more minutes and you’re done. Enjoy ✨
